Chocolate Orange Energy Bites

Whether you’re feeling that afternoon slump or if you’re just in the mood for something sweet, these energy bites bursting with chocolate orange flavour will leave you wanting more. With only 6 ingredients, you can’t go wrong!

1/4 cup raw cashews
2/3 cup raw almonds
1 1/3 cup medjool dates {about 9, depending on the size}
1 navel orange
dark chocolate {70% or higher} OR cacao powder

Soak the almonds and cashews in cold water for 6-8 hours/overnight, then drain and rinse well. Remove the pits from the dates and zest the orange.

Add the nuts, dates, orange zest, and a squeeze of orange juice to the food processor. Pulse to combine until the desired consistency is reached.

 Form the mixture into balls and set in the fridge for 30 minutes to an hour. Pro tip: wet your hands with water before rolling the mixture to prevent it from sticking to your hands.
Here comes the best part – the chocolate! In a double boiler or in the microwave, melt the chocolate stirring occasionally. Add a pinch of salt if desired.

P.S. I won’t tell anyone if some chocolate happens to go “missing” in the process 😉

 As you can see, this part gets really messy but that’s the joy of cooking at home. Drizzle the chocolate over the energy balls set in the fridge for fifteen minutes to let the chocolate solidify. OR, you can roll the energy balls in cacao powder instead.

 There you have it! A simple, healthy, sweet treat free of mysterious and hard to pronounce ingredients.

These will last for up to a week in the fridge, but once you taste them I highly doubt they will last very long.
