The perfect autumn morning consists of a warm bowl of oats packed with seasonal flavour and your favourite mug of tea. This recipe is reminiscent of those gross apple cinnamon instant oatmeal packets I used to have as a child, of course without the 204939438 grams of sugar. If you aren’t keen on pumpkin spice oats (but who isn’t?!), you’re sure to love this recipe. The best part is that you can prepare these oats the night before and just pop them in the oven in the morning.
Baked Apple Cinnamon Oats
1 apple (I used gala)
1 3/4 cups water
1/4 cup quick-cooking steel cut oats
3/4 cup rolled oats
2 teaspoons cinnamon
pinch of salt
optional: maple syrup
Dice the apple and transfer to a saucepan. Over medium heat, stir the apples, 1/4 cup of water and 1 teaspoon of cinnamon until the apples soften slightly.
Add the oats, salt, cinnamon, and the rest of the water and cook until most of the water is absorbed. Transfer to a baking dish and bake at 350F for 10-15 minutes until the top is golden brown. Serve with fresh apples, maple syrup, and top with another dash of cinnamon.
