Vegan Eggnog Oats

Oats, oats, oats. I know…I’ve posted a lot of oatmeal recipes already but COME ON! Oats are so versatile you could literally flavour them sweet or savoury. Don’t be surprised if I put out a million more oat recipes in the future. Today I decided to go with a holiday classic – eggnog! Or for our purposes, VEGgnog. Get it?!? Stop rolling your eyes at me.

I’ll be the first to admit that I’ve never actually had real dairy eggnog. It used to freak me out. As a child I also always thought it was alcoholic. The thought of mixing milk and alcohol seems revolting. But this recipe isn’t revolting, I promise. I decided to top the oatmeal with fuyu persimmons. If you haven’t had a persimmon yet, I strongly urge you to run at full speed to your grocery store and pick some up NOW before they’re gone. Fuyu persimmons taste great when still firm, and get even sweeter as they soften. Whatever you do, don’t mix up hachiya persimmons with the fuyu variety. Just trust me on this. You’ve been warned haha.

The sweet custardy vanilla flavour of persimmons pairs oh-so-perfectly with the creamy spiced oats. It’s easy to whip up and enjoy any day of the week, but tastes especially delicious on a cozy Sunday.

You can make this recipe one of two ways: I recently found a vegan eggnog which is coconut milk based. Obviously, I fell in love instantly. If you can’t find a vegan eggnog in your grocery store, just use coconut or any plant milk and some spices.

1 cup oats
3/4 cup water
3/4 cup vegan eggnog
1/2 teaspoon Himalayan pink salt
optional: maple syrup/agave nectar
– OR –
replace the eggnog with:
3/4 cup full-fat coconut milk
1/4 teaspoon nutmeg
dash of cinnamon
1 teaspoon vanilla extract
*add more or less of the spices depending on your taste

In a small saucepan, bring the liquid to a gentle boil. Stir in the oats, salt, and spices/vanilla (if using). Simmer for 5-7 minutes or until oats reach your desired consistency.

Top with persimmons (highly recommended) or your favourite fruit. Add a dash of cinnamon, more plant milk/eggnog and some sweetener if you desire and enjoy!
